Recipes ideas for Vegetables

Cold Mango Souffles

Tip: Always strain sugar or jaggery syrups before adding to sweets, so that the muddy grains do not taste like grit in the sweet dishes. Allow the grit to settle below before straining.
 
Ingredients

 

 

1½ cups Mango pulp

250 ml Fresh cream

3 Egg whites

3/4 cup Milk

¼ cup Water

1 tbsp Gelatine

1/3 cup Castor Sugar

1 tbsp Vanilla Custard powder

 

 

 
Directions

 


Mix custard powder with ¼ cup of cold milk.

Heat ½ of cup milk with sugar.

When it starts boiling add custard paste and cook till thick. Allow it to cool.

Add mango puree to this and mix well.

Sprinkle gelatine in ¼ of cup cold water. Allow to soak for 10 minutes.

Keep it in a small pan of simmering water until dissolved completely.

Stir this into mango mixture.

Beat cream till soft peaks form and fold into mango mixture.

Beat egg whites in a dry bowl using electric beater at high speed till firm peaks form.

Fold into mango mixture.

Pour into small dishes. Refrigerate until set.

Decorate with whipped cream, mango pieces and grated chocolate on top.
