Recipes ideas for Vegetables

MANICOTTI STUFFED WITH SPINACH AND RICOTTA CHEESE

This is an all time favorite dish among friends. It is not very difficult and is a nice dish for a dinner party accompanied with a tossed salad and garlic bread.

6-8 c. tomato sauce, cook for 1-1 1/2 hours only
1 pkg. manicotti
1 pkg. frozen spinach
1 pt. Ricotta or cottage cheese
1 c. Mozzarella cheese
1/4 c. Parmesan cheese
1 egg

1. Cook spinach, drain. Mix spinach with Ricotta cheese, egg, 1/3 cup Mozzarella cheese, 3 tablespoons Parmesan cheese all together. Stuffed uncooked shells with mixture.


2. Put two cups of tomato sauce in bottom of large baking pan size 9 x 12 x 2 inches. Arrange manicotti in pan 1 inch apart. Pour about 4 cups of sauce over manicotti to cover. Top with rest of Mozzarella and Parmesan cheese.

3. Cover pan with foil. Bake in 375 degree oven for 45 minutes. Uncover and cook 10 minutes longer or until cheese is lightly brown.

4. Let sit 5 minutes before serving. Serves 1-2 per person. Serves 6-8 people
