POTATO CAKES
An old cook of my childhood used to make some attractive potato cakes like this.
1 kilo. potatoes: 2 egg-yolks: 25g. butter: 1 teaspoonful cream: salt and pepper.
Steam the potatoes and rub them through a sieve. Mash them finely while still hot and still over a gentle heat mix in the egg-yolks, the butter, cream and seasoning, and if necessary a very little flour to bind the mixture.
Roll this out when cold to half an inch thick, make a crisscross pattern on top with the back of a table knife, cut in suitable pieces and brown them on both sides in a frying-pan greased as for making pancakes
