POTATOES AND LEMON

Scrape and half-cook some small new potatoes in salted water, then pour all the water away except enough just to cover them.
Into this squeeze the juice of a lemon and finish cooking them in this.
When they are done, drain them well, pour over them some melted butter and, just as they leave the kitchen, sprinkle them with freshly chopped parsley.
