SPINACH PANCAKE
The simplest way is to mix some finely chopped cooked and well dried spinach with an equal amount of unsweetened pancake batter, seasoning rather highly and adding a little nutmeg, and to cook pancakes made with this mixture in the usual way, serving them with melted butter and grated cheese.
But it is nicer and more decorative to spread the cooked seasoned spinach mixture on thin cooked pancakes and to pile these on top of each other until you have a heap of three or four. When the pile is finished, sprinkle it with melted butter and grated cheese, and brown in the oven. Cut down in slices like a cake to serve, with more cheese and melted butter handed separately.
